Hi Sarah -- I usually favor the slow cooking method with my prime rib. At 350, allow 25 min. per lb. plus 25 min. for rare; 30 min. per lb. plus 30 min. for medium; 35 min. per lb. plus 35 min. for well done.
For quick roasting, preheat the oven to 425 and cook the roast for 15 min. before reducing the heat to 375-400 and proceed, allowing 15 min. per lb. plus 15 min. for rare; 20 plus 20 for medium and 25 plus 25 for well done, if you must.
For a giant roast (7+ lbs.) for which you need a small business loan, cut the heat slightly after the first 2 hr. to keep from overcooking it.
If you have a meat thermometer, by all means use it.
