: : I've been searching everywhere for Magic Pan recipes..only have come up with Orange almond salad & Potage St. Germaine...I really want to find recipe for cheese fritters. I've seen mention of a Magic Pan Cookbook throughout different message boards, but can't find any such book...DOES ANYONE know the recipe for the cheese fritters, or what this mysterious cookbook is called? Like others on this board, I can breakdown restaurant quantities...there must be SOMEONE out there with this info!?! (keeping fingers crossed)

: For those of you comfortable with restaurant portions I will try to give you quantities this weekend. Unfortunatly, I do not have recipes for everything, but I do know quantities of the ingredients. That is why I was going to try them at home first, to make sure I can duplicate the REAL thing. I will make the cheese fritters Saturday and let you know how they come out!

Hi there,

I too am looking for the cheese fritter recipe. I worked with one of the former magic pan chefs in boston and he told me that you make a basic batter and then mix in a 3 to 1 ratio of shredded monterey jack and bleu cheese. I've tried this at home and it's close.
