POTAGE ST. GERMAIN (from Magic Pan)
1 lb. ham bone
4 1/2 c. water
2 c. chicken broth
2 c. split peas have
2/3 c. leek (chopped)
1/3 c. finely chopped carrot
1/3 c. celery (finely chopped)
1/2 t. sugar
1/8 t. marjoram
1/8 t. pepper
21/2 c. milk
l c. whipping cream
3/4 c. chopped ham
1/2 c. cooked chopped chicken
Bring to boil: ham bone, water, broth, peas. Skim.
Reduce heat, simmer 30 min. (or longer)
Add vegetables, seasonings, simmer and stir 30-40 minutes till peas soft and mixture thick. Remove ham bone, gradually stir in milk and cream. Add ham and chicken. Simmer
10 min. more. Season if necessary. Puree.
Add about 1/4 cup of sherry toward end if desired.
