Hi Patrica -- I assume that you are aware of such internet resources
as: http://healthcentral.com/mhc/top/002443.cfm where you can find
substitute ideas like corn and rice flours.

It sounds like you need one of those 1000 Chinese Recipes books. If
you snuggle up to rice noodles and corn products I immediately think
of Mexican and Chinese/Japanese cuisine as likely sources. I suspect
that the biggest problems come from processors who add their favorite
gluten-based product and don't list it on the label.

I take it that you found the "Best gluten-free recipes" entry on the
FoodGuy "Save Time/Site of the Week" bar. I'll keep my eyes open.
