I like a 400 degree oven for about 20-25 minutes, then reduce it to 275.
Coat the roast with a light rub down of butter and Soy and Worchester sauce. I also pat it with alittle rock salt and Thyeme. It sticks to the butter. This will help crisp the outside of the meat at 400, and seal-in the juices. At 275, about 30 minutes a pound works. I stab the thing about an inch apart, and insert small slices of fresh garlic and a pepper corn or two in each stab. Leave the bone on for roasting.
Buy a good meat thermoeter, and USE IT! This tool is absolutely essential equipment. When the roast hits 135, take it out! It will cook another 10 or so degrees on its own. 200 degrees = about 30-40 minute per pound.
It takes all day, but slow works OK. All that matters is the internal meat temperature, and juices, not how long it took to get it there. For a 5-6lb roast, check it after about 90 minutes, then every 20 minutes thereafter. DO NOT OVER COOK. After a couple roasts of simular size, you'll get a good feel for the time. Don't trust hard and fast rules about so many pounds and so many minutes at a given temperature.
Buy 1 pound more than you are feeding. 5 pound roast feeds 4 moderate appetites.
